What's Cooking Good Looking? Balsamic Glazed Brussel Sprouts with Pancetta

Brussel sprouts. You either hate them or love them. There's no in between. I used to hate them. My mom would make them for Thanksgiving with butter, bacon, and bread crumbs (the 4 B's!). Then one day, the food gods sent me a recipe in my dreams (ok, so I saw it on TV; it's the same thing). Balsamic Glazed Brussel Sprouts with Pancetta. I made them and I was in love!

This one skillet meal is super easy to make. Trust me when I say, if you hated brussel sprouts in the past, you will love them now after trying this recipe. I made this for my parents and boyfriend and they loved them! I'm made this dish for Thanksgiving this year and it was a hit!


First, cut up your pancetta in small, bite size pieces. Next, in a medium to large non stick skillet, put 2 tbsp of olive oil followed by your pancetta. Cook them for 10-15 minutes until they're nice and crispy. For me, it only took 10 minutes to get them crispy. Once done, remove them from the pan with a slotted spoon and put them on a piece of paper towel to drain the oil. 


Next, with the same oil and pan (you should have the original 2 tbsp of oil remaining, if not add a little more), put your brussel sprouts faced down in the oil to brown. I used frozen sprouts, but you can use fresh ones as well. Cook them for about 3 minutes or until they have a little color (I like to turn them over once to make they get a nice color all over). Next, put in your 1/2 cup of water, cover the pan, and let them steam for another 3 minutes until tender. Once done, poke them with a toothpick or fork to see if they're tender. If not, keep them cooking until they are. If the water evaporates before they're tender, just add some more. Remove them from the pan with a slotted spoon and put them on a piece of paper towel. 


Next, get rid of the oil from the pan (dump it into the sink or somewhere else); you don't want the oil in your glaze). Now, put a 1/4 cup of balsamic vinegar into the same pan (remember no oil in there!) and let that reduce down for about 2 minutes, until it's syrupy. After it's reduced, add 2 tbsp of butter into the vinegar and let that melt. Once melted, add the pancetta and brussel sprouts back into the pan and coat it with the balsamic glaze. Season with salt and pepper.


Viola! You now have a simple and easy one skillet meal. Serve this at your next dinner or holiday party or just make it for dinner for your family. Even the most pickiest eaters will love these! Sweet, crispy, and oh so delicious.

Balsamic Glazed Brussel Sprouts with Pancetta
From Dinner At Tiffani's 

2 oz of pancetta, cut into 1/4 inch dice (about 1/2 cup)
1-2 tbsp extra virgin olive oil
10 oz Brussel sprouts (about 18 medium sprouts) trimmed and halved through the core
1/4 cup balsamic vinegar
2 tbsp unsalted butter
Salt and pepper to

Directions

Heat the pancetta and 1 tablespoon of the oil in a heavy 10-inch straight-sided saute pan over medium-low heat until golden and crisp all over, 10 to 15 minutes. With a slotted spoon, transfer the pancetta to a plate lined with paper towels, leaving the drippings in the pan.


You should have about 2 tablespoons of drippings left in the pan; if not, add the remaining tablespoon of oil. Measure out 1/2 cup water and set aside. Put the pan over medium-high heat and arrange the sprouts cut-side down in a single layer. Cook until nicely browned, 2 to 3 minutes. Add the water to the pan, cover immediately and simmer until the sprouts are tender when poked with a fork or skewer, about 3 minutes. (If the water evaporates before the sprouts become tender, add more water 1/4 cup at a time.) Transfer the sprouts to a plate with a slotted spoon.
Return the pan to medium-high heat. (It is fine if any water remains; it will boil off with the vinegar.) Add the vinegar and a few grinds of pepper and boil the vinegar until lightly syrupy and reduced to about 2 tablespoons, about 2 minutes. Reduce the heat to low, add the butter and stir until melted. Return the sprouts and pancetta to the pan and toss to evenly coat with the sauce. Season with salt and more pepper.

The Autumn Tag


1. Okay, we're talking coffee. What is your favourite seasonal drink from Starbucks/Costa/Cafe Nero?
I hate Starbucks nor do I drink coffee. 

2. Accessories - What do you opt for - boots, scarf, gloves?
Scarves. I do wear Uggs, but I hate them. They feel like moon boots; but I wear them because I take public transportation and NYC winters can be brutal. 


3. Music - What do you love to listen to during the Autumn?
I pretty much keep the same playlist, but I'm always looking for new music. Lately I've been listening to Swedish artist Tove Lo. 

4. Perfume - what's your favorite scent at this time of the year?
I don't wear perfume much. If I do it's from Bath and Body Works and it's a nice autumn scent,  like apple or something. 

5. Candles - which scents will you be burning this season?
Omg, I love candles! Right now I have a Pumpkin Spice and an Apple  candle out. 
  
6. What do you love most about Autumn?
Everything! The scents, food, leaves, colors, Halloween, etc.


7. Favorite make up look?
I hardly wear makeup. 

8. What are you looking forward to most during this season?
Halloween. I'm planning a Halloween party for October 24th with my therapist. It's for her, me, and her clients.  I can't wait! It helps that I'm being certified in event planning and I'm glad she asked me to help.

I'm currently opening, well re-opening, my Etsy shop and making crafts for my shop, Sundresses and Songbirds. 

I'm currently bookmarking a ton of recipes and crafts on Pinterest. I'm always saving things on there and forgetting about them. 

I'm currently wearing a purple short sleeve t-shirt and gray shorts. 

I'm currently trying to do the 21 Day Project, where for 21 days you commit to a certain task; like exercising, reading, crafting, dieting, etc. 

I'm currently listening to music. Nothing in particular; lately nothing has really caught my attention. I haven't found any new music, I've listening to top 40, and just flipping through the songs. Which is unlike me. I used to find new music everyday and listen to underground music. 

I'm currently going nuts trying to find a job.

What If I Won The Lotto

If I won the lottery, I would travel the world. I'd go to all the states, England, Ireland, Spain, Italy, France, Poland, Germany, Sweden, Dominican Republic, Australia, Canada....I think you get the picture. 

I would also move out of my parents house and buy a house for Jose and I. Maybe if it's enough money, I'd quit my job. I'd give some money to my parents to help them and some to my future mother in law. 

I'd buy a dog, new clothes, a car, and anything else that caught my eye. I would also use it to pay for my wedding. 

I'd go to culinary school and give money to Jose to go back and pay off his debts. Maybe I'd even start my own bakery or restaurant.

Gosh! There so many things I would do, I can't even think of them all! I did the win the lottery once, though. Not a lot, just $10; but it was on my birthday and I was pretty happy.

Currently

I'm currently watching a food show on Travel channel. They're showing so many delicious and yummy looking sandwiches. I'm a foodie and I watch a lot of cooking/food shows. Plus, I do want to go to culinary school next year. I can't wait; food is my life! 

I'm currently loving the autumn. My favorite holiday, Halloween, is coming up and it's pumpkin-cozy-comfort food season. All those yummy smelling fragrances, beautiful colors, cinnamon, clover, nutmeg, Thanksgiving, scary movies, cardigans, etc. I love autumn! Since, I live in NY I practically live in jeans, boots, sweaters, and jackets. We only get like 3-4 months of warm weather and then it's cool weather the rest of the year. 

I'm currently considering going to culinary school earlier than planned. Also, I'm considering getting a small tattoo.  

I'm currently learning to loosen up more. I'm very serious and rigid.I try to loosen up and fun when I'm out but it's difficult for me. 

I'm currently needing sleep, a job, freedom from my parents house, a vacation, new clothes, and more books. 

I'm currently changing my wardrobe from summer clothes to fall/winter.

Currently



THIS WEEKS THEMES:

I'm currently falling behind on everything; blog posts, crafts, my etsy shop, letter writing, etc. You name it, I've fallen behind on it. I have to admit, I've gotten lazy ever since last May when I graduated college. It's like my normal routine and my brain just shut off and all I want to do is relax and sit around. When will I snap out of it?

I'm currently wearing lounge shorts and a t-shirt. Oh, and a boho bracelet. 

I'm currently making lunch more often for my fiance and I. The other day I made baked sweet and sour chicken. It was so fudging good.And yesterday I made BBQ chicken cornbread pie. It was really good. 

I'm currently smiling at my fiance's jokes. He makes me laugh all the time! 

I'm currently learning that life is short; enjoy it and live freely. I'm also learning how to network and market my Jamberry Nails business.

Currently


THIS WEEKS THEMES:

I'm currently craving food of all sorts. This year all I want to do is eat. My love of food has grown immensely, which I guess is because I'm going out more with Jose, so I'm trying new foods. Plus, I want to go to culinary school and I've been cooking more.  

I'm currently cleaning my room....slowly. Ok, I admit I haven't kept up with it and I also admit I'm not the best cleaner. But I do it eventually, so that counts right? 

I'm currently daydreaming of autumn! I can't wait for the crisp weather, the leaves changing, the pumpkins, the decor, Halloween, and everything in between. It's funny, back in May and June, I was raving about how I couldn't wait for the summer. I love both seasons, so I'm happy until December. 

I'm currently growing sunflowers, trying to grow tomatoes, strawberries, and an avocado tree. 

I'm currently reading Alphabet Weekends by Elizabeth Noble. It's such a good book! At first I was iffy on it, but I continued it and it's turning out to be really good. It's about 3 different couples; Natalie and Tom, who play a game where they do these different activities that start with the each letter of the alphabet. Lucy and Patrick; Patrick loses his job and Lucy gets fed up with him and starts cheating on him and Anna and Nicholas, Natalie's parents. Anna has depression and Nicholas gets a stroke. I definitely recommend it! Maybe I should start a book series on here? 

I know I've been quiet, I honestly try to keep up with this blog nowadays, but truthfully I have no motivation and I get distracted really easily. Like, I'll start one project, put it down, start something new, and never finish the first one.

When I open the fridge, I always hope I find... something sweet, a snack, and something for lunch. 

My favorite article of clothing is... my corgi shirt. I wear it a lot! 

Last week I was really pissed when...
I don't really remember. I'm sure I was pissed off, but I'm so laid back, I forget about those moments. 


One thing nobody understands about me is... I'm a routine person. If it's out of my routine, I freak out, I panic, and I won't relax until everything is back to the way it was. 


One thing I don't understand is... Oh god, I could go on and on with this one. I don't understand men's mentality, how you can forget your child in the back set of a hot car, math, and tons more. 


The world would be a better place if... there was peace, everyone got along, and everything was FREE. 


If I had a million dollars, I'd... buy a house, a car, new clothes, go on vacation, get married to my fiance, donate some money, and quit my job! 


If I knew I'd die next week, this week I'd.... get married to the love of my life, travel the world, and learn everything I possibly could. 


If I could change one thing about myself, it would be... my weight. I want to be skinnier; I'm tired of being fat. 


Something that can always make me happy is... my fiance, Jose. Oh, and food. Food always makes me happy. 


Something I'll never blog about is... I'm pretty open on here, so nothing's off limits. Ok, I lied; since this is a family friendly blog, talking about my sex life is off limits. It's private and it's going to stay that way. 

If I could go anywhere I would go...
to Europe. More specifically, Ireland, England, Southern Italy, Poland, Germany, and Sweden. Mainly Ireland and England though. 

If I were an animal I would be a ... Elephant? I'm not quite sure, haven't given it much thought.  


A job I've always wanted is... I've always wanted to be an actress, but I have stage fright. 

My idea of a perfect day is...
a WHOLE day (night and day) with my fiance. Since we don't live together at the moment, that'd be perfect. Go to a hotel, stay in with him, order room service, watch TV, cuddle, and do other couple things ;)

Kid Friendly Party Food

Pancake Muffins. Yes, two breakfast foods in one. Fluffy, golden brown, and oh so delicious.

These muffins are great for kids; they can just dip the muffins into the maple syrup but they're also great for parties. You and your friends/family can gather around the table and just eat and dip them.

They're very versatile too. You can add chocolate chips, blueberries, nuts, etc. to the batter. You can cut out the middle and fill it with your favorite fruit compost or other favorite filling. I added raspberry jam and some maple syrup.

All you need to do is make your favorite pancake recipe and fill a muffin tray, either 24 or 12 muffin tray. The recipe I used was a simple and classic. Actually the best recipe I've used for pancakes. The recipe calls for 1/2 to 3/4 cups of milk. I used both amounts, because I found the batter to be dry; it worked out beautifully.

After you make the pancake batter, butter your muffin tray and pop them in the oven at 350 degrees for 20 minutes. But remember I used a 12 muffin tray, so adjust the time if you use a 24 muffin tray. After they're golden brown, check if they're done by poking a toothpick or knife in the middle. If it comes out clean, you're good to go. Take them out, let them cool, and put them on a plate. Then you can jazz them up however you want. Again, you can use fruit compost, other type of filling, out just good ol' maple syrup.

That's it! That's how simple it is to make these delicious muffins. Enjoy!

Currently & Announcement

I'm currently snapping nothing. 

I'm currently checking job boards online. I lost my job the other day :( Back to square one again.

I'm currently learning it's ok if you lose your job and to cry about it for a day. But after crying for a day, get back up, update your resume, get back onto those job boards, and apply. Oh, and call people back when they offer you a job. I have yet to do that...eek!

I'm currently dropping everything. I dropped my anxiety medication a few days ago, I dropped a fork I was using today, I've dropped my phone, etc. I could go on forever. I've been a klutz. 

I'm currently saving money by being frugal. 

Now for the announcement. 

I'm expanding my blog! I'm including cooking and traveling now. Since I don't travel much, I'm looking for contributing writers for the traveling section. Wishing I was rich and never had to work a day in my life. I also wish I had my own apartment, was married to my boyfriend, was financially stable, and had my career choice figured out. 

Hoping I get a job soon. I just lost my job today, so yea...

I'm currently feeling under the weather. My allergies have been killing me since last week. I have a love/hate relationship with the spring. 

Jose, my boyfriend, is currently questioning what his next step is in terms of schooling and a career. He just finished his Associates in Criminal Justice, but now he's wondering what to get his Bachelor's in and what career he wants in CJ. 

I'm currently longing to go on vacation and get out of NYC for awhile. I haven't been on vacation since the summer of 2012. 

I'm currently watching TV. Nothing in particular; I have it on for background noise. 

I'm currently moving nothing. I do want to move soon, out my parents house, but I'm not financially stable yet.

I'm currently writing nothing. I haven't had any motivation to write stories, blog posts, or anything. I hope to get back into writing, I love it; but I'm having writers block. 

I'm currently visiting the beach more now since it's warmer out. I went yesterday and it was so nice to just sit there and relax, listening to music. 

I'm currently learning what a freegan is and how to save money. If I can get it for free, I'll grab it. Except for clothes, I don't believe in paying a lot or anything for certain things. If I can save money from certain things and put it towards better and important things, I'll do it. I'm all about saving money, reusing things, using coupons, and getting stuff for free. 

I'm currently wanting new clothes and to go shopping! I also want a better job, to travel this summer, and my own apartment. 

I'm currently loving the beach, the warm weather, the fact that's it's also summer, the sunshine, reading more, and so much more. I could go on forever.

I'm currently learning about being frugal, saving money, spending less, and cutting costs wherever I can. 

I'm currently wanting the summer to come officially! I can't wait for it! It's been in the 80's these past 3 days and I've loved it. I do not want the rain for the next 3 or 4 days, but oh well! 

I'm currently enjoying this beautiful weather! Like I said, it's been in the 80's and it's such a nice change from the cool weather. In NYC, we have cool & cold weather from October to April, May is warm, then June to September it's hot. 

I'm currently missing my boyfriend, Jose. He had class today, boo hoo :( 

I'm currently playing scrabble on my Ipad.

Summer's In The Air


Summer! I absolutely love it. I'm quite happy right now, since spring and summer are my favorite seasons. Summer is the time of year where happiness is in the air. These next 3 days in NYC, it's going to be 80 degrees. That's unusually high for this time of year; it's usually in the 60's, but I'm not complaining. 

I love the end of spring and early June days. It's not too hot yet and the air is transitioning from cool to warm. A wonderful feeling. Those are the days where you can feel and smell the hint of summer in the air. I can't describe it, but on those days where summer's lingering, the air has this certain fragrance. I don't know what it is exactly, but I love it. 

Summer means it's the time to do anything and everything. To me, it means an array of things. My birthday (July 2), the beach (which I've grown to love), the park, warm breezes, picnics, outdoor fun, water balloon fights, summer clothing (which I love), great food, great company, outdoor concerts and great music, reading outside, freedom, tanning, air conditioner (I sleep with it on at night), long nights, fireworks, etc. I could go on forever. I don't know about you, but I practically live outside in the summer, unless it's really hot out. But even then I still go out to the beach or on my porch. 

The only thing I hate about it is the mosquitoes. I get bitten like you wouldn't believe. It's like they think I'm a delicious dessert. One summer, it was so bad here that I got 30 bites; that was torture. 

Once summer's over I do like the fall, but I get seasonal depression. I have no motivation to do anything once summer's over. Due to that, I'll probably move somewhere where it's warm all year around.

I'm currently buying food to make for a campfire picnic I'm going to on Sunday in NYC with my boyfriend. It's a potluck type of thing and I can't wait! I love these things and I love cooking, so it's perfect. I might make s'mores of some sort and macaroni salad with zucchini. 

I'm currently snapping nothing. 

I'm currently scoring nothing.

I'm currently struggling to figure out what I want to major in. I have my associates in liberal arts but I want to get my bachelors and I have no clue as to what it'll be in. I am doing a certification for event and wedding planning but it's not going well, I'm not getting anywhere with it. Home schooling is a lot harder than I thought. I actually prefer an actual school setting. I'm thinking of majoring in culinary arts or journalism. A few weeks ago was interior design. So who knows! Next week I'll be a doctor. Tune in next week to "what will Courtney do as a major". 

I'm currently losing  nothing. 

It hasn't been a very productive week. Oh well! See you next week. A post about the picnic will be coming next week.

Currently

I'm currently making a sweet grilled cheese with a strawberry jam, nutella (yum! I could eat the whole jar myself in a week), and mascarpone (sweet Italian cheese. I tried it last night. If you don't add anything to it, it's bland). For lunch, I'm making spaghetti squash and shrimp in a lemon butter sauce. 

I'm currently eating yogurt but I will soon be eating what I made. 

Update: the sandwich was a big mess and not very good. The nutella was the best part, the strawberries weren't so good, and the cheese melted so much that it wasn't even there. The spaghetti squash and shrimp was delicious! Even my boyfriend loved it! 

I'm currently enjoying the spring weather and the peace and quiet at home here. My mom went back to work from being off for Easter, so it's nice to be by myself for the day.

I'm currently hiding nothing.

I'm currently noticing that the trees are budding and I'm gaining weight, which isn't good. I need to lose some pounds instead. But I'm a foodie, I love to eat!

I'm currently clearing out my boyfriend's laptop. It was running so slow, that I download a virus program, which helped somewhat. Then I decided to uninstall some programs and delete stuff and now I screwed up his internet; meaning there's none! Ok, so I'm not a computer whiz. I know the basics. 

I'm currently digging in the dirt. I want to start gardening and planting flowers, veggies, and fruits. 

I'm currently mixing nothing. I haven't made anything from scratch in awhile. Even though I did help my grandfather and mom make Easter cookies from scratch, I didn't mix the dough.  

I'm currently reading nothing. I buy book after book, but I never seem to sit down and actually read them. 

I'm currently watching the food network and DIY network a lot lately. I love cooking (I'm considering majoring in it) and I love those landscaping shows.
